This is more accurately called a “split side” since it includes half of the cuts from a side of beef.

We now ship quarters directly from our inventory. What this means is that the cost is a flat fee, not based on gross hanging weight. You still get to customize options typical in a custom quarter.

Please note that the weights included in this product are averages.

A typical split side includes 90-100lbs of steaks, roasts, ground, and stewing beef, plus other items based on your choices.
A standard selection of choices would result in approximately:

~17lbs of Steaks, including

  • Tenderloin steak
  • Rib Eye steak
  • Sirloin steak
  • Strip Loin steak
  • Blade steak

~17lbs of Roasts, including

  • Cross Rib roast
  • Sirloin Tip roast
  • Brisket roast
  • Rump Roast

~20lbs of Other Items including

  • Braising ribs
  • Stewing beef
  • All-Beef Patties
  • Soup Bones

And about 40lbs of ground beef, for a total of approximately 90lbs.

You can add heart, tongue, blade steak, skirt steak, and turn roasts into ground beef if you wish.

If you ask for extras, we simply reduce the amount of ground beef you receive.
