This is more accurately called a “split side” since it includes half of the cuts from a side of beef.
We now ship quarters directly from our inventory. What this means is that the cost is a flat fee, not based on gross hanging weight. You still get to customize options typical in a custom quarter.
Please note that the weights included in this product are averages.
A typical split side includes 90-100lbs of steaks, roasts, ground, and stewing beef, plus other items based on your choices.
A standard selection of choices would result in:
- 2lbs Tenderloin steak
- 5lbs Rib Eye steak
- 4lbs Sirloin steak
- 4lbs T-Bone steak
- 4lbs New York Strip Loin steak
- 6lbs Blade roast
